Epic Lemon Drizzle Cake

Serves: 6 to 8  |  Prep time: 5 min
Pictured: cake made with 1 box Serapheena 6" Gluten-Free Vanilla Pound Cake Mix baked in a 9" x 4" loaf tin

Ingredients

For the cake:
1 box Vanilla Pound Cake Mix (or mug cake)
3 limes - zest and juice
For the glaze:
1/2 cup icing sugar
Zest of 1 lime 
Few drops of lime juice
Method:
1. Prepare batter as directed on the box
2. Add juice and zest of 3 limes and mix well
3. Bake as directed. (Loaf tins take longer in the oven than round cakes).
4. Allow cake to cool.
5. Prepare lemon glaze by mixing lemon zest + a few drops of lime juice into the icing sugar to get a thick paste.
5. Drizzle lemon glaze over the cake. Garnish with lime slices + lemon zest 
A word on lemon zest. Only go as far as the coloured part of the skin. The inner white part is bitter and should be avoided.
In the lime light: We use limes in India, not lemons, and I prefer the bright sharp contrast with the warm Vanilla flavours of the cake. If you're in Kolkata, please do use the local gonghoraj lebu for their superb delicate flavour.
