#1 One Step Carrot Cake

Grate a carrot, toss in some walnuts and raisins, and bake as directed on the box. Makes a great tea time snack. And is perfect for a weekend brunch!

#2 Classic Banana Bread:

This is one of those old time classics that's actually filled with vitamins and minerals... and tastes divine! Just mash a banana and add to the batter.  Bake in a loaf tin. Remember that a loaf tin might take a little longer to bake (especially if it's very full). Add walnuts, or chopped chocolate chunks to make it extra special!

 

#3 Apple Breakfast Muffins

This 30 second recipe will make you want to wake and bake! Grate an apple (you can peel it if you want, or just grate the whole lot). Add grated apple to the batter. Add raisins - for a better start. Or amp up the iron content with some chopped dates. Spoon into cupcake moulds. Bake for 15 min at 170C. 

Or make microwave muffins - using small microwave safe mugs. They'll be done in about 1:30 - 2 min!

 

#4 Fully Loaded Easy Bake

 Warm and comforting, and perfect for a rainy day... This cake is my easy go to dessert when I want something that's quick and healthy. And here's the best part... I mix everything right in the dish and there's no washing up afterwards! All you have to do is prepare the batter in the glass dish, and add whatever you want. I toss in a handful of toasted nuts, cranberries, dates and sunflower seeds. Save some to decorate on top of the cake. Microwave it for around 3 minutes, and you're done! You can also bake this in the oven, at 170C for about 20 to 25 min.

 

#5 High-Tea Simplicity

Not really a recipe as much as an idea for how to jazz up a special tea time treat. Simply bake in a loaf tin, and cut slices. Spread each slice with a little cream cheese frosting, and serve with a platter of cut fruit. Everyone can mix and match.

Drizzle with honey, or top with desiccated coconut. It's a fun interactive dessert that brings people closer together!
