What is Gluten?
Gluten is a type of protein present in wheat, barley, rye and other grains. It is what makes a rumali roti, and pizza dough stretchy. Gluten has no nutritional value, and many people have problems digesting gluten. In its mild form, this results in 'gluten intolerance', with unpleasant symptoms like bloating, diarrhea, constipation, headaches and gas. You can develop gluten intolerance suddenly and some people have symptoms earlier in life while others only show symptoms later.
The more serious form of gluten intolerance is called Celiac Disease. The body develops a severe reaction to gluten and this condition can result in serious issues like anemia, osteoporosis, stunted growth and low immunity. Celiac disease is a serious condition and must be diagnosed by a doctor.
Are gluten-free foods healthier?
The short answer is not always. Most gluten-free products on the market simply substitute cheap white wheat flour (maida) with cheap white rice flour. These are both equally low in nutritional content.
