Three Ways to Save an Overdone Cake

We’ve all been there, busy with the kids and forgotten to check on the cake and now it’s a bit overdone. Here’s how you can save desert!

  1. Cake Pops – Crumble the cake into a large bowl and add butter cream icing until it begins to resemble a rough dough. Shape the dough into balls around a popsicle stick, and place on a plate. Put it in the fridge to set. Dip in melted chocolate, or roll in chopped nuts or desiccated coconut.
  2. Ice Cream Cake – Crumble the cake and add melted butter to form a rough dough. Press down into a glass bowl. Top with icecream of choice and put into the freezer to set.
  3. Long Island Desert: Divide cake into 12 clear tall glasses. Drizzle with juice of your choice (apple usually works for me). Add a layer of fruit, followed by a layer of cream or ice cream. Top with a cherry and an umbrella.
